How do you regulate the spin on your pitch and run shots? A few days ago when I played, 4/5 pitch and run shots rolled as I expected them to. However, 1 of them (an 8 iron with lots of green to work with) checked up quickly. The shot had a low trajectory, probably not more than 2' off the ground, but it checked on the first hop and didn't roll nearly as far as one would expect.
What are the keys to getting consistent spin and roll on such shots?

Consistent ball position is the main factor. You want to hit the shots in the same part of the swing arc.
I'm assuming you are keeping your feet together with the weight on the front leg so the lower body is stable.
We've been taught to play the ball back when chipping but particularly when chipping with feet together it's possible to get it too far back. I suspect that what happened with your shot. Especially with an 8 iron that's easy to do.
Backspin (checking up) is caused only by a considerable downward stoke to the ball. Backspin looks great and backspin is great fun but for almost everyone on the planet backspin is just too hard to control to ever get consistent results because there are so many variables (ball type, club face, lie, wetness, etc.).
You want to hit your chips and pitches with a slightly descending stroke. To descending and you'll get backspin, not descending enough (right at the bottom of the swing arc) and your shot has to be very precise because if you hit it slightly on the upswing it will be thin and probably go way past the target.
So at address your club shaft should be slightly leaning towards the target. Spend 10 minutes practicing and experimenting with ball position and I'll doubt you'll have any problems after that.
